I really can’t tell if it is because it seems like it has been the longest winter in Banff or whether it really is sweltering but simply put the weather is stunning right now in Banff and the Rockies. There isn’t a trace of snow around town. Though this may be bad news for the ski lovers, the plus side is that when you are skiing, it will be under cobalt skies in nothing but a hoodie (and probably trousers). Better again, you can now sit around town and enjoy a beer or a coffee with the heat of the sun on your back and the stunning views of the Canadian Rockies all around you. The word ‘heaven’ comes to mind. So where are the best places to catch the sun with a coffee in Banff?

Morning:

Evelyn’s Cafe – 215 Banff Avenue

There aren’t many tables but if you manage to make it out of your hotel before noon, you can sit here in the fresh morning mountain air, read the newspaper and enjoy a late in what surely must be one of the finest surrounds in the world.

Afternoon:

Whitebark Cafe – 401 Banff Avenue

Continuously voted “Best of the Bow: Coffee”, the Whitebark features fair trade, organic Moja Coffee and tea sourced thru the Banff Tea Company. Pastries and niche snacks abound, with four gluten free options along with daily vegan options as well. A little something for everyone!!

Evening: So let’s move to beer, not coffee!!

Wild Bill’s or Legion – Banff Avenue

Due to its massive balcony, Wild Bill’s catches the sun almost to its death. Having dinner out here at about 6pm is one of the nicest things to do in Banff. The views down on Banff Avenue are the best in town as well.

The Legion has hands down the best beer deck in the evening in town. Cheap jugs of beer, located right by the water with wildlife always popping around, lots of tables and seats for friends – perfect. The legion is the perfect way to wind down your day in Banff after a day of hiking or biking.

I never really understood what a themed bar was. I figured if I was in Ireland, it was an Irish bar unless it said Papa Giorgio’s Italian barra (probably not how it is spelt). Well Banff has a nightlife to compete with any of the big cities in the world and it being so small means you can literally visit them all if you have the energy, money and staying power. So in my calculations, a Canadian bar in Banff is anything that is named after a native animal. Examples: The Elk, The Bison, Timber’s (kind of like Timberwolves’s).

With this in mind, I am going to announce hypocrisy in my own blog and announce the Magpie and Stump as the best themed bar in Banff. In my defence, the Magpie is not a Canadian saying and is in fact an old saying from olde England. St. James’ Gate is a good Irish bar, Wild Bill’s is a fun …western bar and the Pump and Tap is an apt English bar but The Magpie and Stump is the only bar / restaurant that really fulfills its description as a themed bar.

Its menu as far as food is concerned is massive and delicious. If you decide to have a bite to eat, keep in mind how big the portions are. You can definitely share a main course. Every day there is a different special on and there is a great selection of margaritas to attempt to drink. When the sun comes out, there is a great late afternoon drinking spot outside. The decorations are so over the top that you can’t help but feel like you are indeed in the craziness of a Mexican bar but with less moustaches and kidnap threats! What does “fournil” mean?

The word fournil is an old French word, first seen written in the 12th century. It essentially means “bakehouse” and is the area where the bread oven is located in a community.

Centuries ago, homes did not have a bread oven. Communities leaned on the communal oven, often located in the centre of the village, to bake their bread. Villagers would create the dough and score their bread at home then proceed to the fournil to have their bread baked.

The baker (boulanger in French) would receive a loaf or milled grain in exchange for their work.

JK Core Values

JK Bakery has three local owners and operators who have built up the bakery based on the following core values: family, wholesome food, made from scratch, and community. They feel that this encompasses the reason that the bakery exists and why they come to work everyday.

What’s in the name?

Against popular belief our name does not stand for Just Kidding Bakery. The bakery was founded in 1994 by a German man named John Kirchpfennig, hence the name JK Bakery. John still frequents the bakery every now and then but it was bought by new owners in 2010 who liked the name and saw no reason to change it.

Why JK Bakery?

Because unlike most commercial bakeries, at JK we do not use any preservatives in any of our breads. Our breads are all made by hand right here in the Bow Valley with the best ingredients.

The JK Artisan Baking Process

Preparing the dough 

We use only deluxe bread flour milled from the best grain southern Alberta has to offer, pure rocky mountain water, salt and fresh yeast. Some of our doughs need to rest for a full day before it is divided and shaped.

Proofing

Once shaped, our dough needs to proof. Proofing with steam allows the yeast to ferment and cause the dough to rise. Proofing is very important to achieve the proper shape and texture of the bread.  Our traditional basket bread is proofed in a wicker basket that gives a higher rise and a unique appearance.

Baking

Before baking, the loaves are scored with a razor blade to control their expansion in the oven. We then bake the bread on our slate deck oven at high heat. Most of our artisan breads are baked directly on the slate while others like the family and sandwich loaves are baked in our large rotational oven.

Storing JK Breads

  • JK Breads don’t have the additives and preservatives used by most commercial bakeries to extend their shelf life.
  • Consequently, fresh JK breads may have a shorter shelf life than what you might get from the supermarkets. We suggest the following to store your JK breads;
  • If the bread is crusty, store it in a paper bag, a towel or a bread box at room temperature. This will allow it to breathe and retain its crust.
  • If your bread is soft, store it in a plastic bag or container at room temperature to keep it soft. You can always freeze your fresh bread for use at a later date.

Tommy’s Neighbourhood Pub – 120 Banff Avenue, Alberta

Ahh good old consistent, cheap, laid back Tommy’s! It is one of the only bars in Banff that feels quite normal. No disrespect meant but it is also one of the only bars that doesn’t have beautiful young ladies serving. I never thought I would say it but it is actually refreshing to be served by a normal person! Tommy’s is darkish, slightly underground and has some excellent food and drinks specials. If this is not what you are after for dining in Banff– stop reading now!

Every day there is a different food special for less than $10 including great hamburgers, BLT’s and turkey wraps. Every day, however, is steak special day. You get a steak sandwich (though technically only one piece of bread doesn’t make it a sandwich) with fries and salad for less than $10. The steak is delicious and extremely filling. You are served fast and in a nice relaxed manner.

The biggest problem with going for a steak in Tommy’s is that you may never leave. The plasma TV screens are always showing live sports and I think I mentioned the drinks are cheap! There are two dart boards down the back where you can get worse and worse as you drink. Tommy’s really is quite unique to Banff and anybody looking for a relaxing beer and delicious steak could do a lot worse!

Executive Chef Martin Luthi has more than 30 years experience and has been overseeing the 132 chefs and 104 kitchen crew members at The Fairmont Banff Springs since 1980. Bow Valley Grill
Beautiful mountain views and a menu full of fresh market cuisine attract diners to this restaurant. The menu changes according to the season and includes rotisserie meats and a variety of fresh seafood. Their breads are baked on-site in their open kitchen, as are their decadent desserts. Buffet breakfasts are $27; weekend brunches are $39.50 for adults and $14.50 for children ages 6-12.

Castello Ristorante
